There’s nothing quite like the smell of fresh peaches bubbling under a buttery, biscuit-like topping. This peach cobbler recipe uses ripe, juicy peaches at their peak—no canned fruit needed. It’s simple, comforting, and perfect for warm evenings, backyard dinners, or anytime you want dessert that tastes like sunshine.

Why Fresh Peaches Make All the Difference

Fresh peaches give the filling a bright, natural sweetness and a tender texture that canned peaches can’t match. Look for peaches that give slightly when pressed and smell fragrant. Freestone varieties are easiest to work with.

Ingredients

(Serves 6–8)

For the peach filling:

  • 6–7 cups fresh peaches (about 8–10 medium peaches), peeled, pitted, and sliced
  • ¾ cup granulated sugar (adjust to taste depending on peach sweetness)
  • 2 tablespoons cornstarch (or all-purpose flour)
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • Pinch of salt
  • 1 teaspoon vanilla extract

For the cobbler topping:

  • 1 cup all-purpose flour
  • ⅓ cup granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • ½ cup milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons coarse sugar or turbinado sugar for sprinkling (optional)

For serving (optional but highly recommended):

  • Vanilla ice cream or lightly sweetened whipped cream

Instructions

  1. Preheat and prepare Preheat your oven to 375°F (190°C). Lightly butter a 9×9-inch or similar 2-quart baking dish.
  2. Make the peach filling In a large bowl, gently toss the sliced peaches with the sugar, cornstarch, lemon juice, cinnamon, nutmeg (if using), salt, and vanilla. Let the mixture sit for 10–15 minutes so the peaches release some juices. Pour everything into the prepared baking dish and spread evenly.
  3. Make the topping In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold butter cubes and cut them in with a pastry cutter or your fingertips until the mixture looks like coarse crumbs with some pea-sized pieces remaining. Stir in the milk and vanilla just until a soft dough forms—don’t overmix.
  4. Assemble Drop spoonfuls of the dough over the peaches, covering most of the surface but leaving a few gaps so steam can escape and the filling can bubble up. Sprinkle the top with coarse sugar if you like a little extra crunch and sparkle.
  5. Bake Bake for 40–50 minutes, until the topping is golden brown and the peach juices are bubbling thickly around the edges. If the top browns too quickly, loosely tent with foil for the last 10 minutes.
  6. Cool slightly and serve Let the cobbler rest for 15–20 minutes so the filling can thicken. Serve warm with a scoop of vanilla ice cream that melts into the juicy peaches.

Tips for the Best Peach Cobbler

  • Peeling peaches easily: Score an X on the bottom of each peach, blanch in boiling water for 30–45 seconds, then transfer to an ice bath. The skins should slip right off.
  • Too juicy? If your peaches are very ripe and watery, add an extra teaspoon of cornstarch.
  • Make it ahead: Assemble the filling in the baking dish up to a few hours ahead and keep it covered in the fridge. Add the topping just before baking.
  • Leftovers: Cover and refrigerate for up to 3 days. Reheat gently in a 325°F oven or microwave individual portions.

Easy Variations

  • Add a handful of fresh blueberries or blackberries with the peaches.
  • Swap half the peaches for nectarines.
  • For a richer topping, use buttermilk instead of regular milk.
  • A pinch of cardamom or a drop of almond extract in the filling is delicious.

This is the kind of dessert that disappears fast. The combination of warm, cinnamon-spiced peaches and a tender, buttery crust is pure comfort. Grab the freshest peaches you can find and give it a try—you’ll have a new summer favorite.
